Peanut Butter Cookies ~ A Family Favorite

One of the things I love the most about Christmas-time is the homey feeling with all of the baking going on. The house smells lovely. The tree is sparkling. Blankets cover the couch. Books are always scattered here, there and everywhere. The cookie jar is overflowing. Ahhh...perfection.

One of my absolute favorite cookie recipes is not necessarily "Christmasy" but I tend to use any excuse to make them. If ya know what I mean. ;)

I LOVE peanut butter cookies. Love them. Love them. Love them. The problem was finding a GREAT recipe. When it comes to peanut butter cookies I want them soft, moist and easy to make. I'm kind of picky about my PB cookies.

Here is my absolute favorite, go to on any occasion recipe.

Peanut Butter Cookies

1/2 cup Sugar
1/2 cup Brown Sugar
1/2 cup Peanut Butter
1/2 cup Softened Butter
1 Egg
1 1/4 cup Flour
3/4 tsp. Baking Soda
1/2 tsp. Baking Powder
1/4 tsp. Salt

~ In a small bowl, cream sugars with butter
~ Mix in peanut butter and egg
~ In a large bowl, combine dry ingredients
~ Mix all ingredients together
~ Bake @ 325 for 12-15 minutes

*I know that MOST PB cookies are crisscrossed on top with a fork and covered in sugar. You can do with them what you want. Sometimes I do. Sometimes I don't. Sometimes we color sugar depending on the holiday and sometimes we eat them right out of the oven.
